We evaluated the effect of posting caloric information on food purchases at a cafeteria. Purchases of more than 14,300 entrees, vegetables, and salads by 6,970 customers were unobtrusively monitored via the cash register inventory control system during 15 evening observations. A quasi-multiple-baseline design across food groups was used to test the additive effect of labeling the three lowest caloric choices for vegetables, salads, and entrees. A linear logit analysis confirmed that labeling increased the probability of low calorie selections for vegetables and salads, but not for entrees. Observations of meals purchased by a subsample of 413 customers indicated labeling did not change the total caloric content of meals. The number of customers and total sales per evening were unaffected by the labeling intervention. The results suggest that manipulating environmental cues may be an effective method for changing food purchases in a cafeteria, but labeling individual items may not be the best way to decrease total calories purchased.  相似文献

Teachers were asked to identify and rank 10 preferred stimuli for 9 toddlers, and a hierarchy of preference for these items was determined via a direct preference assessment. The reinforcing efficacy of the most highly preferred items identified by each method was evaluated concurrently in a reinforcer assessment. The reinforcer assessment showed that all stimuli identified as highly preferred via the direct preference assessment and teacher rankings functioned as reinforcers. The highest ranked stimuli in the direct assessment were more reinforcing than the teachers' top-ranked stimuli for 5 of 9 participants, whereas the teachers' top-ranked stimulus was more reinforcing than the highest ranked stimulus of the direct assessment for only 1 child. A strong positive correlation between rankings generated through the two assessments was identified for only 1 of the 9 participants. Despite poor correspondence between rankings generated through the teacher interview and direct preference assessment, results of the reinforcer assessment suggest that both methods are effective in identifying reinforcers for toddlers.  相似文献

This research aims to analyze the relationship between sociocultural values and human food preferences. The latter, as shown in this paper, are greatly influenced by cultural identity. This work stems from a theoretical context that originated in Europe and the United States towards the mid‐twentieth century, within the field of the anthropology of food. A qualitative and quantitative analysis has been performed in the Comunidad Autónoma de Aragón (Spain). Research methods include focus groups, in‐depth interviews, participant observation, and a questionnaire that was handed out to a representative sample of the Aragonese population (816 people over 21 years of age; confidence level of 95.5% and error margin of ±3.5). Regarding the research outcome, a highly significant qualitative and quantitative connection has been found between food selection and cultural identity. In other words, people prefer to consume foods that are symbolically associated with their own culture, in order to reinforce their sense of belonging. Although this study has been carried out in Aragón, it is our belief that the results can be generalized to other areas. The originality and interest of our findings are notable considering that, to date, few works have analyzed the sociocultural factors motivating food behavior. Moreover, these results could be used by public and private organizations to meet objectives such as health promotion and product marketing.  相似文献

Experiment 1 used 6 preschool boys and Experiment 2 used 6 adult women to explore the effects of food preference on humans' choice in self-control paradigms. The boys showed a higher proportion of responses for more delayed, larger reinforcers (a measure of self-control) when those choices resulted in receipt of the most preferred food compared to when those choices resulted in the least preferred food. Further, the boys chose the less delayed, smaller reinforcers significantly more often when only those choices, as opposed to both choices, resulted in the most preferred food. Conversely, they chose the more delayed, larger reinforcers significantly more often when only those choices, as opposed to both choices, resulted in the most preferred food. Finally, the women demonstrated significantly less sensitivity to reinforcer amount relative to sensitivity to reinforcer delay (another measure of self-control) when they had a higher preference for the juice received as the less delayed, smaller reinforcer than for the juice received as the more delayed, larger reinforcer. Together, the results show that subjects' food preferences can influence self-control for food reinforcers.  相似文献

Little is known about the food preferences of children with a feeding disorder and medical diagnoses. Therefore, we conducted repeated paired-stimulus-preference assessments with foods to which we either exposed or did not expose 3 children with a feeding disorder and medical diagnoses during clinical treatment. Responding was relatively equivalent for exposure and nonexposure foods throughout the preference assessments, suggesting that preferences for foods did not change due to exposure during treatment.  相似文献

Women of lower educational attainment are more likely to eat unhealthy diets than women of higher educational attainment. To identify influences on the food choices of women with lower educational attainment, 11 focus groups (eight with women of lower, and three with women of higher educational attainment) were held. Using a semi-structured discussion guide, environmental, social, historical and psychological factors known to be associated with food choice were explored. Audio recordings were transcribed verbatim and thematically analysed. Compared to women of higher educational attainment, women of lower educational attainment had less control over their families’ food choices, less support for attempts to eat healthily, fewer opportunities to observe and learn good food-related practices, more negative affect, more perceived environmental constraints and more ambiguous beliefs about the consequences of eating a nutritious diet. These findings provide a starting point for taking forward the design of an intervention to improve the diets of young women.  相似文献

The aim of present study was to examine the relationship between young children's peer‐reported trustworthiness and their school adjustment. Two hundred and eleven (103 male and 108 female) children in the United Kingdom (mean age = 6 years 2 months) took part in this study. Measures of peer‐reported trustworthiness, child‐rated school adjustment, and teacher‐rated school adjustment were administered twice across a one‐year period. Also, children's number of friendships, peer acceptance, and self‐control were assessed at Time 2. Multisample path analyses were conducted separately by sex. For both samples there were direct longitudinal paths between peer‐reported trustworthiness and changes in teacher‐rated school adjustment. For boys, the longitudinal path between peer‐reported trustworthiness and changes in child‐rated loneliness was mediated by peer acceptance, and peer‐reported trustworthiness mediated the relationship between self‐control and teacher‐rated school adjustment. Sex differences in peer‐reported trustworthiness also emerged: girls were rated as more trustworthy by their peers than were boys. The findings support the hypothesis that young children's trustworthiness contributes to school adjustment, which is due in part to peer acceptance. Copyright © 2007 John Wiley & Sons, Ltd.  相似文献

A study tested an extended Theory of Planned Behaviour (TPB) model, inclusive of measures of ethnical identification and perceived ethnic group norms, in the ethnical food purchasing domain. One hundred and thirty‐five Jamaicans, living in the Brixton neighbourhood, London, were administered a self‐reported questionnaire measuring the classical TPB components (attitudes, subjective norms, perceived behavioural control, behavioural intentions) plus three additional components: identification with the Jamaican group, perceived norms of the Jamaican group and past behaviour. Results of hierarchical multiple regressions showed that past behaviour, ethnical identification and perceived group norms explain an additional proportion of variance in intentions, independently of attitudes, subjective norms and perceived control. A two‐way interaction, between ethnical identification and perceived group norms, was detected. A stronger relation between group norms and intentions emerged among high ethnical identifiers.
