This study tested a central tenet of behavioral weight control: does slower eating rate reduce food intake and positively affect appetite ratings. This study used direct behavioral observation of participants' (n=48; 25BMI35) eating behavior using Universal Eating Monitors. Food intake and ratings of "desire to eat" (collected each minute during meals) were represented as a function of time. Based on an acclimation meal, participants' eating rate was modified by instructing them to eat a bite of food when prompted by a computer, which generated three types of meals: (1) baseline (eating rate was the same as the acclimation meal), (2) reduced-rate (eating rate was reduced by 50%), and (3) combined-rate (eating rate at the beginning of the meal was identical to that of the acclimation meal, subsequently eating rate was reduced by 50%). All meals were ad libitum. Slower eating rate during the reduced-rate and combined-rate meals resulted in less food intake compared to the baseline meal for men, but not women. Ratings of desire to eat, normalized for the amount of food consumed, were lower during the combined-rate meal for men and women. Thus, this basic premise of behavioral weight control was supported for men, but not for women.  相似文献

Gender differences in food intake and selection first appear in adolescence. Men consume more calories than women, and the sexes have different eating styles, which indicate that women have been socialized to eat in a more feminine manner. Women experience more food-related conflict than men do, in that they like fattening foods but perceive that they should not eat them. Pressures to be thin are present in early adolescence, as noted by dieting behavior starting in very young girls. Women experience more dissatisfaction with their body weight and shape than men do. Sociocultural and psychological factors may be important in the etiology of eating disorders, which are much more prevalent in females than in males. Thus, further studies of gender differences in eating behavior will be important for understanding the etiology of eating and body-weight disorders and for designing gender-appropriate treatments.  相似文献

African-American women experience disproportionately higher rates of obesity than do Caucasian women. The stress African-American women encounter from experiences of discrimination may influence their eating behaviours, which could contribute to weight gain. Emotional eating theory suggests some people increase their intake of high-calorie foods to cope with stressful experiences. We investigated the effects of social exclusion by other African-American women or by Caucasian women for African-American women’s distress and food consumption using a laboratory paradigm. As hypothesised, there were main effects of ostracism and interactions between ostracism and race, although not all of the interactions took the expected form. As hypothesised, African-American women ate more potato crisps after being excluded by Caucasians than by African-Americans. Unexpectedly, African-American women who were excluded by other African-American women self-reported more emotional distress than did African-American women excluded by Caucasian women. These findings suggest that ostracism by both in-group and out-group members are disturbing, although people may respond to in-group and out-group exclusion in different ways. Directions for future research are suggested that could elucidate the circumstances under which different emotional and behavioural coping responses are employed.  相似文献

Eating disorders are thought to occur less among African-American women than among women of other ethnic groups. Ninety-one clinicians read 1 of 3 passages (differing only with regards to the girl’s race: African-American, Caucasian, or Hispanic) describing disturbed eating patterns of a fictional character named Mary. Participants were then asked to indicate if they thought Mary had a problem and to rate her anxiety, depression, and eating disorder symptoms based upon the passage they had read. The results suggest that clinicians may have race-based stereotypes about eating disorders that could impede their detection of symptoms in African-American girls.  相似文献

A total of 107 Malay primary school girls (8-9 yr. old) completed a set of measurements on eating behavior (ChEAT, food neophobia scales, and dieting experience), the Rosenberg Self-Esteem Scale, body shape satisfaction, dietary intake, weight, and height. About 38% of the girls scored 20 and more on the ChEAT, and 46% of them reported dieting by reducing sugar and sweets (73%), skipping meals (67%), reducing fat foods (60%) and snacks (53%) as the most frequent methods practiced. In general, those girls with higher ChEAT scores tended to have lower self-esteem (r=.39), indicating they were more unwilling to try new foods (food neophobic) (r=.29), chose a smaller figure for desired body size (r=-.25), and were more dissatisfied with their body size (r=.31).  相似文献

Past research indicates a significantly higher prevalence of early sexual maturation in African American (AA) girls, which is associated with a number of psychological and behavioral problems as well as with health problems such as childhood obesity and diabetes. Both nutrition and body image perceptions have never before been empirically investigated in the context of early puberty. The present study analyzed nutritional differences among AA girls who experience early sexual maturation with those who do not, as well as the dynamics of early sexual maturation, food consumption, and body image perceptions of AA girls. Participants were 45 AA girls ages 7-10 years, and guardians who were recruited from Boys and Girls Clubs in the southeastern part of the U.S. The Continuing Survey of Food Intakes by Individuals and Fallon and Rozin's (1985) Body Image Checklist was used to assess the food intake and body image perceptions of the young girls. Evidence of early sexual maturation was operationalized as the parental report of development of any secondary sexual characteristics (breasts, hips, pubic hair) in the young girl. A two-day food intake recall was conducted over a representative weekday period. Results revealed a significant difference between the calcium and fiber consumption of the AA girls who experienced early sexual maturation versus those who did not. Also, results indicated a relationship between parental characteristics, household shopping practices, and food consumption of the young girls. These findings are important and can be used to predict, prepare, and educate the AA population as well as establish appropriate support systems for these child-women.  相似文献

The authors investigated the effect of mood on food selection. Participants (N = 98) indicated the likelihood of general eating and the likelihood of eating specific foods after reading and projecting themselves onto the events and emotions described in a sad and a happy vignette. Both men and women believed they were more likely to consume food following a happy versus a sad event, and men believed they were significantly more likely to eat than did women. However, the type of food men and women believed they would consume interacted with the type of event experienced. Vegetarian snack foods were more likely to be consumed following a happy versus a sad event, with men more likely to eat snack foods. Men did not significantly change in likelihood of consuming sweet foods as their mood changed. However, women believed they were more likely to consume sweet foods following a sad event. The authors discuss the results in terms of a self-medication hypothesis and the effect of carbohydrates on central serotonin and endogenous opioids. Overall, results demonstrated that mood influences belief in the likelihood of food selection.  相似文献

Epidemiological research suggests racial differences in the presentation of eating disorder symptoms. However, no studies have examined associations between race and eating disorder symptom trajectories across youth and adolescence, which is necessary to inform culturally sensitive prevention programs. The purpose of the current study was to examine the trajectories of eating disorder symptoms from childhood to young adulthood and to examine whether race was associated with trajectory group membership. Data were drawn from 2,305 Black and White girls who participated in a community-based longitudinal cohort study (Pittsburgh Girls Study) examining the development of psychopathology. The child and adult versions of the Eating Attitudes Test assessed self-reported eating disorder symptoms at six time points between ages 9 and 21 years. Growth mixture modeling was used to examine developmental trajectories of dieting, bulimia/food preoccupation, and total eating disorder symptom scores. Given potential confounds with race and disordered eating, financial strain (i.e., receiving public assistance) and weight were included as covariates. Four to six distinct developmental patterns were found across eating disorder symptoms, including none, increasing, decreasing, or increasing-decreasing trajectories. Black girls had a greater likelihood of being in the decreasing trajectories for dieting, bulimia/food preoccupation, and total eating disorder symptom scores. White girls were more likely to follow increasing trajectories of dieting and total eating disorder symptom scores compared to Black girls. These results highlight the importance of examining the influence of racial background on eating disorder symptoms and the potential need for differences in the timing and focus of prevention interventions in these groups.  相似文献

Depression in adolescent girls may result in negative consequences in young adulthood. The Center for Epidemiologic Studies Depression Scale (CES-D) was administered to 1,727 Black and White girls ages 16 to 18 years who participated in the National Heart, Lung, and Blood Institute's Growth and Health Study. Three years later, women in the depressed groups were more likely to be current smokers, had attained a lower level of education, and reported lower self-worth relative to the nondepressed group. Body dissatisfaction, eating concerns, and loneliness were greater in the depressed groups. Relative to Black women, White women who were moderately depressed during adolescence reported more health care services utilization in young adulthood. Prevention efforts for depressed adolescents should be broadly focused to improve young adult outcomes.  相似文献

This study examined eating patterns and breakfast consumption, and their relationships to weight and binge eating, in obese individuals with binge eating disorder (BED). One-hundred seventy-three consecutively evaluated men (n=46) and women (n=127) with BED were administered semi-structured interviews and self-report measures to assess the frequency of meals and snacks eaten, as well as binge eating and eating disorder features. Overall, those who consumed more frequent meals, particularly breakfast, and snacks, weighed less. Breakfast, which was eaten on a daily basis by less than half of participants (n=74; 43%), was the least frequently eaten meal of the day. Participants (n=56; 32%) who ate three meals per day weighed significantly less, and had significantly fewer binges, than participants (n=117; 68%) who did not regularly eat three meals per day. Thus, eating more frequently, having breakfast and consuming three meals every day, have potentially important clinical applications for the treatment of BED given that the effectiveness of specific interventions within treatments for BED are unknown, and that weight loss outcome for BED has been poor.  相似文献

Behavioral measures of food consumption and tasting were combined with nutrient analysis of foods served at a toddler day-care center to determine whether children at the stage of initial exposure to adult diets would accept textured vegetable protein (TVP) and nonfat dry milk as well as they ate other sources of protein and calcium. Main dishes were prepared alternately with TVP, meat, or neither; others were prepared with or without nonfat dry milk. The variation in ingredients appeared not to affect the amount children ate, the percentage sampling the foods, or the percentage eating half a portion or more. Dishes made with TVP increased protein intake comparable to the amount obtained with meat supplements, and calcium intake increased with nonfat dry-milk supplements. In light of these findings, it appears that TVP and nonfat dry milk are practical alternative sources of protein and calcium in menus for young children.  相似文献

This study experimentally tested the effects of playing with thin dolls on body image and food intake in 6- to 10-year-old Dutch girls (N?=?117). Girls were randomly assigned to play with a thin doll, an average-sized doll, or Legos in a no doll control condition. After 10 min, they participated in a taste-test and completed questionnaires about body image. No differences were found between conditions for any of the body image variables. However, girls who played with the average-sized doll ate significantly more food than girls in other exposure conditions. Although no support was found for the assumption that playing with thin dolls influences body image, the dolls directly affected actual food intake in these young girls.  相似文献

Rural black, economically impoverished Head Start children, whose normal diets were deficient in nutritional requirements, were not consuming the nutritional breakfasts of, to them, unfamiliar foods provided by the county school system. This study investigated a positive simple method to increase the amount of food consumed and thereby ensure proper nutrition. Teachers dispensed sugar-coated cereal and small candies paired with praise contingent on eating behaviors and rewarded children who finished the entire meal with additional treats and praise. Substantial increases were produced in the proportion of meals consumed and in the number of children observed engaged in eating behaviors. These simple traditional behavioral procedures are readily available for any staff working with economically impoverished children as one method of increasing their sampling and consumption of unfamiliar nutritious foods.  相似文献

The aim of this study was to evaluate the differences between adolescents with a high or low risk of developing an eating disorder (ED) in different health behaviors (eating habits, physical activity and the consumption of substances) per gender. The EAT-40 and the Inventory of Behavioral Health in Scholars were applied to 2142 middle school students from Alicante (Spain), of whom 52.8% were girls and 47.2% were boys, with an average age of 13.92 years old (Sd = 1.34). Results indicated that girls with a high risk of developing an ED consumed fewer meals, ate fewer unhealthy foods, followed more diets and paid more attention to nutritional components. Furthermore, they also performed more physical activity with the objective of losing weight, and consumed more tobacco, alcohol and medicines. Boys at high risk of developing an ED followed more diets and paid more attention to nutritional components. For boys, no more differences were found. These results suggest that any program directed at the prevention of ED should not only include nutritional education, but should also seek to promote regular physical activity with objectives other than weight loss or the burning of calories.  相似文献

It is hypothesized that food, which is certainly a necessary commodity with powerful positive reinforcing qualities, also provides a potential threat to organisms, including humans. The act of eating, although necessary for the provision of energy, is a particularly disruptive event in a homeostatic sense. Just as humans learn responses to help them tolerate the administration of dangerous drugs, so do they learn to make anticipatory responses that help minimize the impact of meals on the body, to limit the amount of food consumed within any individual meal, to recruit several parts of the protective stress-response system while meals are being processed, and to limit postprandial behaviors so as to minimize the possibility of disrupting homeostatic systems even more. It is further hypothesized that defenses against eating too much may become activated inappropriately and contribute to clinical problems such as reactive hypoglycemia.  相似文献

Sixty-one obese, normal weight and thin women were observed for 30 minutes as they consumed a free-choice lunch in a quasi-naturalistic setting. Their behavior was unobtrusively quantified in terms of microbehavior (mouthfulls, chews, drinks and pauses) and of the macrobehavior (type and amount of food consumed and total active eating or drinking time). Information on subject and environmental variables are also reported. Observed behavior was analyzed as comparative group totals and as patterns of behavior over time. Comparison of group totals showed that: (a) there were no differences in types of food or number of calories consumed between the three groups, (b) no differences were found between the eating behavior of the normal weight and the obese and (c) the obese women spent less time actively eating, less time chewing and more time drinking than did the thinnest group. Pattern analysis revealed a decrease in all responses over time but showed no significant pattern difference between groups.  相似文献

Identifying major influences on food choice is an important component of nutrition intervention research. Sensitivity to the bitter taste of 6-n-propylthiouracil (PROP) and self-reported preferences for meats, fats, vegetables, and fruit were examined in 329 female breast care patients. Intakes of fat, saturated fat, fiber, folate, and vitamin C, established using 4-day food diaries, were the chief health outcome variables. The strongest predictor of food preferences was age. Preferences were linked to food intakes. Older women consumed less energy and saturated fat and more dietary fiber and vitamin C than did younger women. Age-related decline in taste sensitivity to PROP was associated with increased liking for bitter cruciferous vegetables. Age-associated changes in food preferences and eating habits have implications for the dietary approach to cancer prevention and control.  相似文献

A questionnaire was used to assess nutritional intake, weight status, and dietary practices among 630 U.S. college students. Body mass index (BMI) was calculated using self-reported heights and weights, and nutritional status was assessed via 24-hour recall. Sixty-four percent of the students had acceptable BMI levels (between 19 and 25); 16% of African-American females and 15% of African-American males had BMIs indicating obesity (30 or above). Approximately 18% of the students consumed 5 servings per day of fruits and vegetables, 7% consumed 6 or more grain products, and 53% consumed 2 or more dairy products. Twenty-seven percent reported never/rarely eating fast foods. Recommendations are presented for the development of culturally appropriate health education/promotion programs in order to help college students meet Healthy People 2010 objectives.  相似文献

Three mildly malnourished children with cystic fibrosis and their parents participated in a behavioral group-treatment program that focused on promoting and maintaining increased calorie consumption. Treatment included nutritional education, gradually increasing calorie goals, contingency management, and relaxation training, and was evaluated in a multiple baseline design across four meals. Children's calorie intake increased across meals, and total calorie intake was 32% to 60% above baseline at posttreatment. Increased calorie consumption was maintained at the 96-week follow-up (2 years posttreatment). The children's growth rates in weight and height were greater during the 2 years following treatment than the year prior to treatment. Increases in pace of eating and calories consumed per minute were also observed 1 year posttreatment. These findings replicated and extended earlier research supporting the efficacy of behavioral intervention in the treatment of malnutrition in children with cystic fibrosis.  相似文献

Certain caregiver eating messages – restriction of food intake and pressures to eat – are associated with body dissatisfaction and eating disturbances among young girls. This study explored whether these messages are also associated with body attitudes and eating behaviors of young adult women and men. The Caregiver Eating Messages Scale was developed to measure this construct. Two studies (Ns = 238, 288) indicated that it contained two factors (restrictive/critical messages and pressure to eat messages) and yielded internally consistent, stable, and valid scores. Both factors were positively related to women's BMI, and restrictive/critical messages were positively related to men's BMI. Restrictive/critical messages predicted lower perceived familial body acceptance and intuitive eating and higher perceived familial pressure to be lean and disordered eating. Restrictive/critical messages predicted participants’ body attitudes indirectly via their perceptions of their family's attitude toward their body, with one exception: restrictive/critical messages uniquely predicted men's body appreciation.  相似文献
